French Crepes Recipe

French Crepes are thin pancakes made with a simple batter of flour, eggs, milk, and melted butter, optionally sweetened with sugar. Chilled batter is cooked in a lightly buttered pan, producing delicate, light crepes that can be flipped easily. Served with Nutella and berries, these crepes have a smooth texture and mild flavor that pairs well with sweet fillings.

Description

The French Crepes Recipe uses all-purpose flour, salt, eggs, milk, and melted butter, with optional sugar for slight sweetness. The batter is made by blending wet and dry ingredients gradually until smooth, then refrigerated for at least an hour to improve texture and consistency. Cooking involves spreading a thin layer of batter in a non-stick pan greased with butter, cooking each side briefly until set but still tender.

The crepes are thin and flexible, ideal for folding or rolling around sweet fillings such as Nutella and fresh berries. Their mild flavor allows the fillings to stand out, making them suitable for breakfast, dessert, or snacks.

Ingredients

Servings
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup sugar optional but recommended
  • 4 egg large
  • 1 1/2 cups milk
  • 4 tablespoons butter melted plus extra for cooking

Instructions

  1. In a large mixing bowl stir together the flour and salt, set aside.
  2. In another medium bowl whisk together the eggs and milk, plus sugar if using. Whisk well.
  3. Pour the egg mixture into the bowl with the flour mixture, a quarter at a time, whisking together after each addition until smooth.
  4. Add the melted butter and stir until combined.
  5. Cover the bowl with plastic wrap and place it in the fridge for 1 hour or overnight.
  6. Place a medium non-stick frying pan or crepe pan over medium heat.
  7. Using a kitchen brush, brush the pan with melted butter and pour in about a ¼ cup of crepe batter.
  8. Tip the pan around to spread the batter evenly and cook for about 30 seconds to a minute, or until the top has set, then flip the crepe using a spatula or your hands, and cook for 30 seconds more.
  9. Serve the crepes filled with Nutella and berries on the side.
