Description

Ingredients
- 4 banana overripe, American
- neutral cooking oil for deep frying, generic cooking oil
Frying Batter
- 1 egg white
- 1/2 cup all-purpose flour sifted
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/2 cup water ice cold
- 1 tablespoon neutral cooking oil generic cooking oil
Instructions
- Cut the bananas into 1-inch (2.5 cm) pieces and set aside.
- In a large bowl, mix all the ingredients for the Frying Batter together. Stir well to ensure the batter is smooth. Gently fold the bananas into the batter.
- Heat a small pot with 2-3 inches (5-7 cm) of oil over high heat. The oil is ready when fully heated and a swirl of smoke rises from the surface. Gently drop each piece of banana into the hot oil. Deep-fry the bananas in batches, turning them over so both sides become golden brown and crispy.
- Use a slotted spoon to remove the fried bananas from the oil, and drain them on a plate lined with paper towels. Repeat step 3 until all the bananas are used up. To serve, dust the bananas with powdered sugar. You may also serve them with maple syrup and chocolate sauce.
Notes
- Adding 2 tablespoons of rice flour into the batter can increase crispiness.
