Fried Bananas

Fried Bananas feature overripe banana pieces coated in a light, crispy batter made from egg white, flour, cornstarch, baking powder, and ice-cold water. Deep-fried until golden, they develop a crunchy exterior while maintaining a soft, sweet interior. Serving with powdered sugar, maple syrup, or chocolate sauce adds complementary sweetness. This snack combines tender fruit with a satisfying crisp coating.

Description

This recipe prepares the batter by whisking together egg white, all-purpose flour, cornstarch, baking powder, ice-cold water, and a small amount of cooking oil to achieve a smooth, thin consistency. Pieces of overripe banana are folded gently into the batter for even coating.

The coated banana pieces are deep-fried in hot neutral oil until both sides are golden brown and crispy. Using ice-cold water in the batter helps create a crunchy texture. The hot oil cooks the bananas quickly, preserving their soft interior while adding a crispy outer layer.

After frying, bananas are drained and served warm, dusted with powdered sugar, and optionally accompanied by maple syrup or chocolate sauce for extra sweetness and flavor contrast. This snack makes a sweet treat pairing warm fruit with crisp batter.

For extra crispness, adding rice flour to the batter can help enhance the texture of the coating. Careful temperature control of the frying oil ensures the bananas cook through without becoming greasy.

Ingredients

Servings
  • 4 banana overripe, American
  • neutral cooking oil for deep frying, generic cooking oil

Frying Batter

  • 1 egg white
  • 1/2 cup all-purpose flour sifted
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 cup water ice cold
  • 1 tablespoon neutral cooking oil generic cooking oil

Instructions

  1. Cut the bananas into 1-inch (2.5 cm) pieces and set aside.
  2. In a large bowl, mix all the ingredients for the Frying Batter together. Stir well to ensure the batter is smooth. Gently fold the bananas into the batter.
  3. Heat a small pot with 2-3 inches (5-7 cm) of oil over high heat. The oil is ready when fully heated and a swirl of smoke rises from the surface. Gently drop each piece of banana into the hot oil. Deep-fry the bananas in batches, turning them over so both sides become golden brown and crispy.
  4. Use a slotted spoon to remove the fried bananas from the oil, and drain them on a plate lined with paper towels. Repeat step 3 until all the bananas are used up. To serve, dust the bananas with powdered sugar. You may also serve them with maple syrup and chocolate sauce.

Notes

  • Adding 2 tablespoons of rice flour into the batter can increase crispiness.
