Fried Chicken Tacos

Ingredients

  • 8 each breaded chicken tenders cooked according to package instructions (about 1 pound)
  • 2 cups red cabbage shredded
  • 8 each flour tortillas 4-inch
  • salsa for topping (optional)
  • cilantro for garnish, fresh

For the lime crema:

  • ¾ cup sour cream
  • ¼ cup buttermilk
  • 1 each lime Juiced
  • 1 tablespoon cilantro finely chopped
  • ½ teaspoon kosher salt

Instructions

For the lime crema:

  1. In a small mixing bowl, combine the sour cream, and buttermilk.
  2. Add the fresh lime juice, finely chopped cilantro, and salt.
  3. Mix well until all the ingredients are thoroughly combined..
  4. Cover and refrigerate until ready to use.

Assemble the tacos:

  1. Cook the chicken tenders according to package instructions. Once cooked, cut them in half lengthwise.
  2. Warm the soft tortillas in a skillet over medium heat for about 30 seconds on each side or in the microwave.
  3. To assemble the tacos, start by placing a layer of shredded red cabbage on the tortilla.
  4. Add one or two pieces of cooked chicken tenders on top of the cabbage.
  5. Add a spoonful of salsa over the chicken and cabbage (if using).
  6. Spoon a generous amount of lime crema over the salsa and garnish with the fresh cilantro. Serve and enjoy!

Notes

  • The lime crema can be stored in an airtight container in the refrigerator for up to 3 days.
  • You can use grilled or roasted chicken instead of fried chicken tenders for a lighter option.
  • Corn tortillas can be used in place of flour tortillas if you prefer.
