Description
This Fruit Chaat includes multiple fresh fruits diced into bite-sized pieces to create a colorful, textured mix. The dressing blends freshly squeezed lemon juice with honey or sugar, traditional chaat masala, roasted cumin powder, kashmiri chili powder for mild heat, and black salt or regular salt to season. Tossing the fruits gently with this dressing imparts layers of tangy, sweet, and savory spice characteristic of chaat.

Ingredients
- 1 apple , diced in bite-sized pieces
- 1 pear , diced in bite-sized pieces
- 1-2 kiwi peeled and diced in bite-sized pieces
- 1 cup banana , sliced in bite-sized pieces
- 1 cup mandarin orange segments
- 1 cup strawberries , left whole if small or cut if large
- 1 cup grapes seedless
- 1/3 cup pomegranate seeds

- For the dressing:
- 2 tablespoons lemon juice freshly squeezed
- 2 teaspoons honey optional, or sugar
- 1 teaspoon chaat masala

- 1/2 teaspoon cumin briefly roasted in dry skillet over medium heat until very fragrant, ground
- 1/4 teaspoon kashmiri chili powder , optional for heat (can substitute cayenne)
- kala namak can substitute sea salt or kosher salt, black Himalayan salt, pinch
- mint leaves optional, chopped, for garnish
Instructions
- To make the dressing: In a small bowl, whisk together the lemon juice, honey or sugar, chaat masala, red chili pepper, and salt.Place the fruit in a large bowl. Pour the dressing over the fruits and gently toss to combine, being careful not to mash the fruits. Refrigerate the chaat for at least 15 minutes to allow the flavors to meld, but no more than an hour to prevent it from getting mushy. Serve it garnished with some chopped mint leaves if desired.
