Gajrela
Description
Gajrela is a traditional carrot dessert where grated carrots are cooked in butter over low heat before adding milk. The mixture simmers until most of the milk evaporates, concentrating the flavors and softening the carrots. Sugar is then incorporated and cooked further to create a thick, rich consistency. The dish is garnished with cashews, almonds, and pistachios, contributing crunch and nuttiness.
The slow, gentle cooking allows the natural sweetness of the carrots to develop alongside a creamy texture from the milk and butter. Garnishing with mixed nuts adds texture contrast and visual appeal. Serving it immediately with vanilla ice cream provides a cooling complement and makes a classic combination.
The recipe is straightforward and yields a warm, comforting dessert ideal for those who enjoy rich, creamy carrot-based sweets with nutty accents.
