Description

This recipe begins by seasoning thinly sliced flank or flat iron steak and coating it with a marinade of soy sauce, sesame oil, and cornstarch. This mixture tenderizes the beef and thickens the cooking sauce. The steak is cooked in small batches over high heat to develop slight crispness without overcrowding.

The pan is then used to create a savory garlic, ginger, and sambal butter sauce simmered briefly, infusing the vegetables—snow peas and baby bok choy—with flavor. The cooked steak is returned to the pan, and everything is tossed together with optional fresh herbs and green onions for brightness.

This stir fry is excellent served immediately, either on its own or over steamed rice, combining tender meat and crisp vegetables with a fragrant, mildly spicy sauce.

To achieve thin, even steak slices, briefly freezing the meat before slicing and using a sharp knife is recommended. Using mixed vegetables is flexible, allowing use of various produce on hand.   • pounds flank steak cut into ¼ inch thin strips, or flat iron steak
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 1 tablespoon canola oil
  • 1 cup snow peas
  • 1-2 bok choy baby, bunches
  • 4 tablespoons butter unsalted
  • 1 tablespoon sambal
  • ¼ cup beef broth or chicken broth
  • 4 large garlic minced, cloves
  • 1-2 inch ginger peeled and minced, piece
  • green onions thinly sliced (optional)
  • parsley finely chopped (optional, fresh
  • rice to serve

Instructions

  1. Season the Strips of steak with salt and pepper.
  2. In a medium sized bowl mix together soy sauce, sesame oil and cornstarch until combined. Add in steak and toss until all of the meat is evenly coated with the marinade. Set aside.
  3. Heat oil in a large cast iron skillet (or wok) over high heat. Once oil is smoking add steak in small batches at a time to avoid crowding. Cook the steak until slightly crispy (about 2-3 minutes per batch) stirring frequently then remove from pan. Once all steak is cooked allow the pan to cool.
  4. Add in the broth, butter, garlic, ginger, and sambal over medium heat bringing the garlic butter sauce to a simmer. Allow to cook for 2-3 minutes until garlic and ginger are fragrant. Add in bok choy and snow peas and cook for 2 minutes. Return steak to pan and toss everything together along with green onions and fresh parsley. Serve warm warm as is or over steamed rice.

Notes

  • Freeze steak for 1-2 hours before slicing to get very thin strips with a sharp knife.
  • The soy sauce, sesame oil, and cornstarch marinade flavors and tenderizes the steak, also thickening the sauce.
  • Use any fresh vegetables available for stir fry; snap peas, carrots, asparagus, and bok choy are good choices.
  • Sambal adds a mild heat; adjust the amount to suit your tolerance, suitable for family meals.
  • Serve with steamed rice or sesame ginger noodles for a complete dish.
