You're going to love these incredibly juicy garlic parmesan chicken skewers. Basted with a garlicky butter sauce, they are so delicious and the perfect easy recipe.

Ingredients
- 1⅓ lb (750g) boneless skinless chicken thighs
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 tsp garlic powder
- 2 tsp paprika
- 2 tsp salt
- 1 tsp pepper
For the garlic parmesan butter sauce
- ½ cup butter melted
- 6 garlic cloves minced
- 6 tbsp grated Parmesan cheese
- 2 tsp lemon juice
- 1 tbsp chopped parsley
- 1 tsp salt
- ½ tsp pepper
Instructions
- Slice the chicken into bite-size pieces and place in a large bowl.
- Stir together the oil, lemon juice and seasonings then pour over the chicken.
- Stir to combine and allow to marinade for at least 20 minutes. (You can also marinate the chicken in a ziploc bag.)
- Soak wooden skewers in hot water while the skewers are marinating (metal skewers also work well).
- Thread the marinated chicken pieces onto the skewers.
- Combine melted butter, minced garlic, finely grated parmesan cheese, parsley, salt and pepper in a small bowl.
- Add a squeeze of lemon juice, taste and adjust the seasoning if necessary.
- Cook the chicken in a preheated grill pan or on an outdoor grill over medium-high heat for 12-15 minutes, turning regularly, until the chicken is golden brown on all sides and cooked through.
- Brush the parmesan butter sauce over the chicken for the last 2 minutes of cooking to prevent the garlic from burning.
- Remove from the grill, allow to rest for 2 minutes then serve.
