German Chocolate Cookie Bars
Description
These German Chocolate Cookie Bars start with a crust made from devil's food cake mix combined with melted butter and an egg, pressed into a baking pan and partially baked. While the crust is baking, a filling is prepared using sweetened condensed milk mixed with vanilla, egg, chopped pecans, and shredded coconut, which is then poured over the warm crust. Milk chocolate chips sprinkled on top melt during baking and add smooth chocolate pockets.
The bars are baked until the filling is lightly golden and set, then cooled completely before cutting. This results in bars with a rich, moist crust and a sweet, chewy coconut-pecan topping reminiscent of German chocolate cake. The recipe offers flexibility in cake mix choice and optional enhancements such as a caramel drizzle.
These bars are well suited to be frozen for later enjoyment. Wrapping pieces individually or separating with parchment paper prevents sticking. Their sweet, nutty flavor and chocolate layers make them a treat for dessert or gatherings.
Ingredients
Crust:
- 1 box devil's food cake mix not the kind with pudding added* (or German chocolate cake mix. See notes above)
- 1/2 cup butter melted
- 1 egg large
Filling:
- 1 (14 ounce) can sweetened condensed milk (fat free works great too)
- 1 teaspoon vanilla extract
- 1 egg large
- 1 cup pecans chopped
- 1 cup coconut shredded
- 1/2 cup milk chocolate chips
Instructions
- Preheat the oven to 350 degrees. Grease a 9x13 inch baking pan (I used non-stick cooking spray).
- In a medium bowl, mix together the cake mix, butter and egg.
- Press into the bottom of the prepared pan. The crust should not come up the sides. Bake for 7 minutes and remove from the oven. The crust will not look done.
- While the crust is baking, mix together the sweetened condensed milk, vanilla, egg, pecans and coconut.
- Pour evenly over the warm crust and sprinkle evenly with the chocolate chips.
- Bake for 24-30 minutes, until the top is a light golden brown. Remove from the oven and cool completely before cutting into squares.
Notes
- Any chocolate cake mix can be used in place of devil's food mix if preferred, or you can substitute a homemade cake mix with added cocoa powder.
- To add richness, try drizzling caramel sauce over the bars before serving.
- These bars freeze well; wrap bars individually or separate with parchment paper in an airtight container for best results.
