Description
German Sauerbraten is a traditional pot roast that begins with marinating a beef rump roast in a mixture of red wine vinegar, beef broth, kosher salt, black pepper, white sugar, cloves, and bay leaves for three days. This marinade tenderizes the beef and infuses it with complex, tangy flavors. After marination, the beef is dried and seasoned before being seared on all sides for a flavorful crust.
Following the searing, the roast cooks slowly in its marinade alongside chopped onions, allowing the flavors to deepen and the meat to become tender over three hours. The resulting liquid is strained, and crushed gingersnap cookies are incorporated to thicken and sweeten the sauce, complementing the savory and sour notes of the dish.
The roast is sliced against the grain before serving, ensuring tenderness. Sauerbraten pairs well with hearty sides like red cabbage, potatoes, or spaetzle. The rich sauce coats the meat slices, adding a balance of sweetness, acidity, and spice typical of this recipe.
Ingredients
- 3 pound Beef Rump Roast
- 1 cup red wine vinegar
- 1 cup beef broth
- 1 tablespoon kosher salt
- 1 tablespoon black pepper coarse ground
- 1 tablespoon white sugar
- 10 clove whole
- 2 bay leaf
- 2 onion chopped, yellow
- 2 tablespoons vegetable oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper coarse ground
- 5 gingersnap cookies , crushed to crumbs
Instructions
- Add beef, red wine vinegar, beef broth, 1 tablespoon kosher salt, 1 tablespoon black pepper, sugar, cloves and bay leaves to a large ziplock bag.
- Mix ingredients together, remove all air and marinate for 3 days.
- Preheat oven to 325 degrees.
- Remove beef from marinade, reserve marinade, and dry well.
- Add vegetable oil to large pot on high heat.
- Season beef with 1 teaspoon kosher salt and 1/2 teaspoon coarse ground black pepper.
- Sear on all sides until well browned, about 3-4 minutes on each side.
- Add in the onions, and the marinade.
- Cover and cook for 3 hours.
- Remove the beef from the pot and strain the liquid in the pot.
- If too much liquid cooked off, add 1 cup beef broth.
- Add in half the cookie crumbs and cook until sauce thickens.
- If it stays too thin, add remaining cookies.
- Slice the beef against the grain and serve with sauce.
