Ingredients

  • 2 tablespoons pecans chopped
  • 2 teaspoons chia seeds
  • 2 teaspoons pure maple syrup
  • ½ cup cottage cheese
  • ½ cup blueberries fresh or frozen, see note
  • 1-2 prigs fresh thyme leaves
  • Pinch flakey sea salt

Instructions

  1. In a small bowl, stir together the chopped pecans, chia seeds, and maple syrup.
  2. Add the cottage cheese to a bowl and top with the pecan mixture. Add berries, fresh thyme, and a pinch of flakey sea salt, then dig in and enjoy!

Notes

  • Nuts: walnuts are a great substitute. 
  • Blueberries: if using frozen, thaw in the microwave for 30-60 seconds. They will produce more juice and have a softer texture than fresh. This recipe also works with cherries.
  • Thyme: mint or fresh rosemary are good substitutes.
