Ghraiba Homs

Ghraiba homs is a delicious little Tunisian shortbread prepared with chickpea flour, traditionally featuring sesame and almond flavors.

Ingredients

Servings
  • cups chickpea flour , sifted
  • cup flour , sifted
  • ½ cup butter , melted
  • ½ cup sesame seeds , roasted
  • 5 tablespoons almond roasted, crushed
  • 1 cup icing sugar
  • cup vegetable oil

Instructions

  1. Preheat the oven to 350 F (180˚C).
  2. In a large container. mix the two flours, the icing sugar, and ⅓ cup (50 g) of sesame seeds.
  3. Add the butter and mix well.
  4. Add the oil and mix until smooth.
  5. With the dough, form a cylinder about 1½ inch (4 cm) in diameter.
  6. Flatten the cylinder very slightly and, using a sharp knife, cut square or diamond-shaped cakes and place them on a baking sheet lined with parchment paper.
  7. Mix remaining almonds and sesame.
  8. Sprinkle each ghraiba with this mixture and lightly press on them so the mixture adheres to them.
  9. Bake the ghraibas for 15 to 20 minutes.
  10. Watch closely during baking as the ghraibas must remain rather white.
