Ingredients
- 7 large flour tortillas
- 6 crispy hash brown patties, prepared
- 6 lices thick-cut bacon, cooked
- 8 ounces ground pork sausage, cooked
- 6 large eggs, scrambled
- 2 cups (226 g) sharp cheddar cheese, shredded
- green onions, chopped for garnish
- tomatoes, diced for garnish
Instructions
- Preheat the oven to 400°F. Spray a 9x13-inch baking dish with cooking spray.
- To the baking dish, place one tortilla in each corner and one on each end (6 tortillas in all), overlapping each tortilla slightly to prevent any spaces.
- Place a hash brown patty on top of each tortilla, followed by a piece of bacon. Then sprinkle the cooked sausage, scrambled eggs, and cheese evenly over the bacon.
- Place another tortilla over the top, in the center.
- Carefully fold the tortillas over the filling to completely enclose it.
- Bake for 20-25 minutes, or until crispy. Garnish with green onions and tomatoes.
- Serve warm.
