Ginger Slice - No Bake
Description
The Ginger Slice is a layered no-bake dessert made by crushing gingernut biscuits to form the base mixed with melted butter, condensed milk, golden syrup, and optional ground ginger for warmth. This mixture is pressed into a prepared tin and chilled to set the base layer quickly.
A chocolate topping made from melted dark chocolate and butter is poured evenly over the biscuit layer to create a glossy, rich finish. After refrigerating for approximately two hours, the slice becomes firm enough to cut.
This dessert blends the warm spice of ginger with creamy sweetness and crisp biscuit texture. It does not require traditional baking, making it convenient for home cooks. Variations include substituting the optional ground ginger or using milk chocolate instead of dark chocolate for the topping.
The slice is best made in a standard 20cm (8") square tin for thickness but can adapt to similar containers. It keeps well chilled and serves as a treat for casual or festive occasions.
Ingredients
- 250 g gingernut biscuits
- 80 g condensed milk
- 70 g butter salted
- 1 tablespoon golden syrup
- 1 teaspoon ground ginger optional
Chocolate topping
- 200 g dark chocolate
- 50 g butter salted
Instructions
- Grease and line a 20cm (8") square cake tin and set aside (see my notes).
- Place Gingernut biscuits in a food processor, then process into crumbs then set aside.
- In a large microwave safe bowl, melt butter then add condensed milk and ground ginger and mix. Then add golden syrup and mix to incorporate.
- Add biscuits crumbs and mix together well. Press biscuit mixture into the base of your tin, and place the tin in the fridge to start setting, while you melt the chocolate for the topping.
- Place dark chocolate into a microwave safe bowl, along with the remaining butter. Microwave in 30 second bursts (stirring between bursts with a metal spoon) until chocolate is melted and smooth.
- Pour chocolate in an even layer over the top of the biscuit layer, smooth the top and refrigerate for 2 hours or until set.
Notes
- Any suitable container can be used for this no-bake slice since it does not require oven baking.
- Adjust the size of the container to control layer thickness; smaller tins yield thicker slices, larger ones thinner.
- The ground ginger is optional but adds a distinct warm flavor that complements the biscuits and chocolate.
- You can substitute dark chocolate with milk chocolate for a milder topping.
