Gluten free peach cobbler with basil

This gluten-free peach cobbler blends ripe, thinly sliced peaches with a subtly sweet maple syrup and fresh diced basil, topped with a tender gluten-free biscuit topping. The addition of cinnamon and vanilla complements the fruit, while an optional cinnamon sugar layer adds a warm, spicy sweetness. The cobbler is baked until bubbly with a golden crust, making it a comforting dessert with a fresh herbal twist.

Description

The Gluten Free Peach Cobbler with Basil starts with a filling of peeled, sliced peaches mixed with maple syrup or honey, arrowroot starch to thicken, vanilla extract, ground cinnamon, and finely diced fresh basil. This mixture is transferred to a butter or coconut oil greased casserole dish. The topping combines gluten-free flour mix, sugar, baking powder, salt, milk, and melted coconut oil or butter. Dollops of the topping are spread over the fruit filling and optionally sprinkled with a sugar and cinnamon-nutmeg mixture for extra flavor and crunch before baking.

The combination results in a warm, soft peach base mingled with fragrant basil and a golden, slightly crisp topping. The basil offers a fresh contrast to the sweet and spiced peach filling. This cobbler suits gluten-free diets and can be served with whipped cream or vanilla ice cream for added richness.

Variations include using other stone fruits like apricots or nectarines and substituting non-dairy or regular milk and butter depending on dietary preferences. Sweeteners can be adjusted for alternatives such as monk fruit for keto or paleo diets.

Instructions

How to make gluten free peach cobbler

  1. Make the peach basil filling:
  2. Preheat the oven to 350F. Prep a casserole dish by rubbing the inside with coconut oil or butter. Slice peaches. In a large bowl, mix peaches, maple syrup or honey, starch, vanilla extract, cinnamon and diced fresh basil.Transfer filling to prepped casserole dish.

Make the gluten free cobbler topping:

  1. In a large bowl, combine gluten-free flour mix, sugar, baking powder and salt. Add milk and coconut oil or butter. Stir until just combined. Place clusters of the topping mixture in various spots evenly over the fruit layer. You can then flatten and spread then more evenly with an offset spatula, or the back of a large spoon.

Make the sugar cinnamon topping (optional):

  1. Mix together the sugar cinnamon topping. Sprinkle with the sugar cinnamon mixture evenly across the cobbler topping. You may need less than the stated amount, depending on the size of your casserole dish.

Bake gluten-free peach cobbler

  1. Bake gluten-free peach cobbler at 350F for 30-45 minutes, until the top is golden, the cobbler topping is fully baked and the fruit is bubbling. Let rest before cutting for at least 30 minutes. Serve with additional fresh basil and optional whipped cream or ice cream, if desired. Leftover gluten-free peach cobbler will keep in a sealed container in the fridge for 5 days.

Notes

  • This cobbler is naturally gluten-free, dairy-free, and vegan but can use regular butter and milk if dairy is acceptable.
  • Sweeteners can be replaced with monk fruit or erythritol to fit keto or paleo diets.
  • Other stone fruits like apricots, nectarines, or plums can be substituted for peaches.
