Goat cheese stuffed mini peppers are a delicious and easy-to-make appetizer or snack. The halved and hollowed center is filled with creamy goat cheese mixed with simple spices and herbs.

Ingredients
- 6 mini peppers sliced in half lengthwise and deseeded
- 8 ounce goat cheese
- ¼ cup sour cream
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon thyme
- salt and pepper to taste
- 2 Tablespoon chopped chives
Instructions
- Place the mini peppers onto a serving tray or plate.
- Add the goat cheese, sour cream, onion powder, garlic powder, thyme and salt and pepper to taste to a food processor. Pulse until the mixture is smooth and creamy.
- Put the filling into a piping bag with a tip or Ziploc bag and pipe into the mini peppers.
- Garnish with chopped chives before serving.
