Grape Clafoutis
Description
This Grape Clafoutis begins by buttering a baking dish and evenly layering washed, dried green grapes at the bottom. A batter is prepared by blending all-purpose flour, granulated sugar, vanilla extract, eggs, milk, and melted salted butter until smooth and thin.
The batter is poured over the grapes, allowing them to be partially submerged. Baking at 375°F for approximately one hour sets the custard so that the center is firm but tender. The dish may be dusted with powdered sugar before serving to add a delicate sweetness and decorative touch.
The green grapes soften during baking but retain some burst of juicy texture, contrasting with the creamy custard. This dessert is ideal for serving warm and can be portioned for individual servings using a muffin tin if desired. It keeps well for up to four days refrigerated under plastic wrap.
Patting grapes dry before assembling prevents excess water from diluting the batter, ensuring proper setting and texture.
Ingredients
- 1 pound green grapes washed and dried
- 1¾ cup milk
- 1 teaspoon vanilla extract
- 4 large egg
- ¼ cup butter melted, salted
- 1 cup all-purpose flour
- ½ cup sugar granulated
Instructions
- Preheat oven to 375°F.
- Butter your baking dish with some of the melted butter.
- Place the grapes on the bottom of the baking dish.
- In a blender add the flour, sugar, vanilla extract, remaining butter, eggs, and milk. Blend everything together so that it makes a nice thin batter.
- Pour the clafoutis batter over the grapes.
- Bake for about 1 hour or until the center is set.
- Dust with powdered sugar if preferred and serve warm.
Notes
- Dry grapes thoroughly before baking to avoid excess moisture that can make the clafoutis too wet.
- For individual servings, use a muffin tin to bake separate portions suitable for a crowd.
- Refrigerated leftovers should be covered with plastic wrap and consumed within four days for best quality.
