Description

Greek Apple Cake starts by preparing thin apple slices tossed in lemon juice to prevent browning, then setting aside. A springform pan is greased and floured, and a batter made from creamed butter, sugar, and vanilla eggs is mixed with baking powder, flour, and milk to create a thick mixture. The batter is spread into the pan, topped with the drained apple slices. A mixture of butter, brown sugar, and cinnamon is heated and poured over the apples, which will caramelize during baking. The cake is baked at 320°F until cooked through.

The finished cake has a soft crumb with tender apples on top, complemented by a slightly crisp cinnamon sugar crust. Traditionally, it is served with a sprinkle of icing sugar or vanilla ice cream, adding sweetness and creaminess to the warm cake. The use of Autumn Glory apples provides a mild, fruity flavor but alternatives like Fuji or Honeycrisp work well.

  • 1-2 tbsp butter plus flour for dusting the cake pan
  • 1-2 tbsp all-purpose flour plus flour for dusting the cake pan
  • 3-4 apple Autumn Glory variety, about 1 lb, peeled and sliced
  • 1/4 cup lemon juice
  • 1/2 cup butter softened, salted
  • 1 tbsp butter softened, salted
  • 1 cup white sugar
  • 1 1/2 tsp vanilla extract
  • 2 egg
  • 1 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 cup milk
  • 1/4 cup butter salted
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • icing sugar or vanilla ice cream for serving

Instructions

  1. Preheat the oven to 320F.
  2. Prepare the 10 inch springform pan by greasing with 1-2 tbsp butter and then dust with flour.
  3. Peel, core and thinly slice the apples. Add them to a bowl and pour the 1/4 cup lemon juice over top. Toss to coat and let sit.
  4. In a small bowl mix together the all purpose flour and baking powder and set aside.
  5. In another mixing bowl use a hand mixer to beat the 1/2 cup + 1 tbsp softened butter, 1 cup white sugar and 1 ½ tsp vanilla extract until light and fluffy.  Add the eggs and beat at medium speed to combine. To this same bowl add the flour and baking powder mixture and beat at medium speed until fully incorporated. Finally, add in the milk and beat until combined. This will be a thicker batter.
  6. Add the batter to the prepared baking dish.
  7. Add the 1/4 cup butter, 1/4 cup brown sugar and 1 tsp cinnamon to a small pan and warm over medium heat. Stir until the sugar dissolves and then remove from the heat and set aside.
  8. Drain the lemon juice from the apples. Then, gently arrange the apples on the top of the dough in the baking dish, gently pressing them into the batter. Drizzle the melted butter-brown sugar-cinnamon mixture over the apples.
  9. Bake the cake for 40-50 minutes or until golden brown and a toothpick or cake tester comes out clean.
  10. Cool the cake for 10-15 minutes before removing from the springform pan.
  11. Sprinkle the top of the cake with icing sugar or serve with vanilla ice cream.

Notes

  • If Autumn Glory apples are unavailable, substitute with Fuji, Gala, Honeycrisp, or Golden Delicious varieties for similar texture and flavor.
  • Allow the cake to cool in the springform pan for 10-15 minutes before removing to prevent breaking.
  • This cake keeps well for 1 to 2 days after baking, maintaining its delicate texture during that time.
