Chicken Seasoning

  • 1 pound chicken breast boneless skinless
  • 1/2 teaspoon oregano dried
  • 1/2 teaspoon parsley dried
  • 1/2 teaspoon lemon pepper seasoning
  • 1/4 teaspoon garlic powder
  • salt Kosher, to taste
  • black pepper Kosher, to taste

Greek Chicken Salad Lettuce Cups

  • 1/2 cup cucumber English, diced
  • 1/2 cup roasted red peppers diced
  • 1/4 cup red onion diced
  • 1/4 cup Artichoke chopped, jarred
  • 1 tablespoon parsley chopped fresh flat leaf
  • 2 ounces feta cheese cut into cubes
  • 8 kalamata olives chopped
  • butter or romaine lettuce for serving the chicken salad in

Red Wine Vinaigrette

  • 3 tablespoons red wine vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon oregano dried
  • 1/4 teaspoon garlic powder

Instructions

  1. Season the chicken breasts with the spice mixture and bake, grill, or sautè them. Let the chicken cool then dice it into bite sized pieces and place in a large bowl.
  2. Add all of the remaining ingredients for the chicken salad, except the lettuce to the bowl.
  3. In a small bowl whisk together all of the ingredients for the red wine vinaigrette. Pour the desired amount of vinaigrette over the chicken salad and toss together.
  4. Serve the chicken salad in the butter or romaine lettuce cups.
