Ingredients
- 1 cup yellow split peas rinsed
- 1 large onion chopped
- 2 cloves garlic minced
- 4 cups water
- 1/4 cup olive oil
- Juice of 1 lemon
- salt to taste
- black pepper to taste
- Chopped onions, capers, olive oil drizzle optional, as garnish
Instructions
- Combine split peas, onion, garlic, and water in a large pot. Bring to a boil, then reduce heat to simmer.
- Simmer for about 45 minutes, or until the split peas are very soft and the mixture has thickened.
- Remove from heat. Blend the mixture with an immersion blender until smooth. Stir in olive oil and lemon juice. Season with salt and pepper to taste.
- Serve warm or at room temperature, garnished with chopped fresh onions, capers and a drizzle of olive oil, if desired.
