Greek lamb chops with tzatziki

Greek lamb chops with tzatziki feature tender chops marinated in a blend of olive oil, lemon juice, oregano, rosemary, and garlic, then grilled to caramelized perfection with a pink center. The inclusion of crisped fat adds texture and richness, complemented by cool, creamy tzatziki on the side. This combination provides a classic Greek flavor profile suitable for a flavorful main course.

Description

Greek lamb chops with tzatziki highlight lamb marinated in olive oil, lemon juice, dried oregano, chopped rosemary, and minced garlic, then seasoned with salt and black pepper. The chops are marinated briefly or up to several hours, allowing the flavors to infuse. Grilling on a preheated grill or griddle chars the exterior while keeping the center blushing pink. Standing the chops on their fat side crisps and renders the fat, enhancing texture and flavor. After resting, the chops are served accompanied by a traditional tzatziki sauce, balancing the savory meat with cool acidity and creaminess.

The marinade introduces herbal notes from oregano and rosemary alongside zesty lemon, complementing the rich lamb. Grilling provides a caramelized exterior and juicy interior, while the rendered fat adds a pleasant crispness. Tzatziki offers a refreshing contrast with its cool cucumber and yogurt base, making these chops well-rounded in taste and mouthfeel.

This dish plays well as a main course for lunch or dinner, accompanied by tzatziki which enhances the lamb without overpowering it. It pairs nicely with simple sides like grilled vegetables, pita bread, or a fresh salad. The method ensures a flavorful, tender result thanks to the marinade and grilling technique.
