Greek pork souvlaki
Description
The Greek pork souvlaki recipe starts with pork steak or fillet cut into bite-sized pieces, marinated in a mixture of olive oil, fresh lemon juice, crushed garlic, dried oregano, chopped rosemary, salt, and black pepper. The marinade tenderizes the meat and imbues it with characteristic Greek herbaceous and citrus notes. After marinating for at least 30 minutes or up to 24 hours in the refrigerator, the pork is threaded onto soaked wooden skewers to prevent burning during cooking.
Grilling the skewers over medium-high heat for 5 to 7 minutes per side creates a golden brown exterior and juicy interior, highlighting the pork's natural flavor enhanced by the marinade. Resting the meat briefly after cooking helps redistribute juices for better tenderness.
Typically served with fresh lemon wedges, the souvlaki benefits from a squeeze of lemon juice to add brightness and acidity. This dish is commonly enjoyed as part of Greek meals or casual barbecues, and pairs well with side dishes like pita, tzatziki, and salad.
