Greek Salad Pita Pizzas

Warm, soft pita bread topped with creamy hummus, romaine lettuce, grape tomatoes, cucumber, red onion, feta cheese, and homemade tzatziki sauce.

Ingredients

  • (4) round pita bread or naan bread, round
  • 1 cup hummus (your favorite flavor)
  • 10 ounces grape tomatoes (sliced in half)
  • 2 Tablespoons extra virgin olive oil
  • 2 cups romaine lettuce (chopped)
  • 1 large cucumber sliced and halved, hot house variety
  • 1/4 small red onion (sliced)
  • 1/2 cup feta cheese (crumbled)

Homemade Tzatziki Sauce:

  • 1 cup yogurt plain, Greek
  • 1 Tablespoon extra virgin olive oil
  • 2 teaspoons lemon juice fresh
  • 2 teaspoons red wine vinegar
  • 1 teaspoon salt
  • 2 teaspoons dill or 1/2 teaspoon Dried Dil, fresh
  • 2 garlic minced, cloves
  • 1/2 cup cucumber squeeze in paper towel to drain off some water, grated

Instructions

  1. Preheat oven to 400 degrees or set on broil. Place pita or naan bread on baking sheet. Bake for about 5 minutes or until warmed.
  2. Spread hummus on each pita. In a small bowl, add grape tomatoes, olive oil, and a few pinches of salt. Let marinate for several minutes.
  3. Top pita bread with romaine lettuce, marinated tomatoes, cucumber, red onion, and feta cheese.

To make Tzatziki Sauce:

  1. Stir together yogurt, olive oil, lemon juice, vinegar, salt, dill, and garlic. Stir in grated cucumber and taste for seasonings. **Squeeze the cucumber to remove excess water before adding to rest of ingredients.
  2. Place dollops of tzatziki sauce all over the pita. Serve immediately.
