Grilled Chicken Wings Recipe

This Grilled Chicken Wings recipe provides a straightforward approach to cooking 3 pounds of wings seasoned with a dry rub of onion powder, paprika, garlic powder, salt, and pepper. Wings are grilled over medium-high heat, turning multiple times for even cooking. The recipe includes three sauce options—Honey Garlic, Buffalo, and BBQ Bourbon—each made by boiling ingredients to thicken slightly. Wings can be served plain or tossed in the preferred sauce. Cilantro, chives, and sesame seeds offer optional garnishes.

Description

The wings receive a balanced dry seasoning that builds a mild, savory flavor without overpowering. Cooking on the grill over medium-high heat ensures a nicely charred, crisp exterior while maintaining juicy meat inside. Frequent turning promotes even cooking across all sides.

The sauces add varying tastes: honey garlic provides a sweet and savory glaze, Buffalo sauce brings buttery heat, and BBQ Bourbon adds smoky sweetness. Each sauce is prepared simply by boiling and reducing to achieve a suitable consistency for tossing the wings. Offering sauces separately allows flexibility in serving, including an option for those following a Whole30 diet, who can enjoy the wings plain.

Garnishes like minced cilantro, chopped chives, and sesame seeds can finish the dish with fresh herbal notes and a hint of nuttiness. The recipe accommodates varying preferences by providing multiple complementary sauces alongside the seasoned grilled wings.

Instructions

  1. Preheat your BBQ to medium-high heat and oil your grill. Or use a grill mat, if you have one.
  2. Place the chicken wings in a large bowl. In a small bowl, mix the garlic powder, onion powder, paprika, salt, and pepper. Sprinkle the spices over the chicken wings and toss until they are evenly coated.
  3. Put the chicken wings on the BBQ and close the lid. After 5 mintues, turn the wings over. Repeat turning over the wings 2 more times. They will cook for 20 minutes total.
  4. Once they are cooked, serve them on their own or toss them in one of the 3 sauces.

Make the sauces

  1. All of the sauces are made the same way. Add the ingredients for the sauce you want to make to a small pot. Bring it to a boil over high heat then reduce the heat to medium-high and continue to boil for 3 minutes. The sauces will all thicken a little as they cool.

Notes

  • For Whole30 compliance, serve the chicken wings without any sauces.
  • Ensure the grill is properly oiled to prevent sticking and promote even cooking.
  • The sauces can be made ahead and stored; reheat gently before tossing with wings.
  • Turn wings every 5 minutes during grilling to avoid burning and ensure even cooking.
