Grilled Mustard Chicken Recipe

It's not too early to say that this grilled mustard chicken recipe will be on repeat in your house. It's as easy as it gets for a weeknight meal and you will gush over the tender grilled chicken doused in a walnut mustard cream sauce.

Ingredients

Walnut Mustard Sauce

  • ½ cup walnuts see notes, toasted
  • ½ cup water
  • 1 ½ tablespoons Dijon mustard
  • 1 small garlic clove
  • 1 teaspoon balsamic vinegar
  • salt to taste
  • black pepper to taste

Grilled Mustard Chicken

  • 2 lb chicken thigh see notes, bone-in
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 2 tablespoons Dijon mustard
  • 1 tablespoon thyme minced

Instructions

  1. Preheat your grill to medium heat. Place the walnut mustard sauce ingredients in a blender and blend on high until everything is smooth and creamy. Season to taste with salt and pepper.
  2. Season the chicken with salt and pepper and then rub the mustard over the chicken.
  3. Place the chicken on the bbq and grill them for 20-25 minutes, flipping one time. They are cooked when their juices run clear and they reach an internal temperature of 165 degrees Fahrenheit. Sprinkle the thyme over the chicken and serve with the walnut mustard sauce on the side.

Notes

  • To toast the walnuts place them on a baking tray and toast them in the oven for 7-8 minutes at 350 degrees.
  • You can make this recipe with other cuts of chicken. Boneless thighs take about 10-12 minutes to cook. Chicken breasts take about 15-18 minutes.
