Ground Turkey Pasta Recipe

Ingredients

  • 12 ounces short pasta
  • 1 tablespoon olive oil
  • 1 medium yellow onion finely minced
  • 4 cloves garlic finely minced
  • 1 lb ground turkey
  • 2 tablespoons flour
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 15 ounce diced tomatoes try fire roasted!, canned
  • 1 cup chicken stock
  • ½ cup cream cheese cut into small pieces
  • ½ cup Parmesan Cheese grated
  • ½ cup whipping cream
  • 3 ounces baby spinach
  • 1 cup cheddar cheese grated
  • parsley to serve, minced

Instructions

  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook for 1 minute less than the package instructions. Drain and set aside.
  2. While the pasta cooks, make the sauce. Heat the oil in a large frying pan with high sides (see notes) over medium heat. Add the onion and cook until it turns golden, about 4-5 minutes. Add the garlic and cook for 1 minute more.
  3. Add the turkey and cook, breaking it up as you go, until it is no longer pink. Stir in the flour, Italian seasoning, salt, and pepper.
  4. Add the tomatoes, chicken stock, and cream cheese and simmer the sauce until the cream cheese melts. Stir in the parmesan, whipping cream, and spinach and let the spinach wilt.
  5. Add the pasta to the sauce and stir to combine. Sprinkle the cheddar cheese over the top and cover the pan. Let it cook for 1-2 minutes, until the cheese melts. Serve right away.

Notes

  • Note 1: If your large frying pan doesn't have high sides, you can mix the sauce and pasta in the pasta cooking pot.
