Halloween Funfetti Cupcakes

Cupcakes:

  • 190 g butter softened
  • 190 g caster sugar
  • 1 Teaspoon vanilla extract
  • 3 Medium egg
  • 190 g self-raising flour
  • green food coloring add a little bit at a time until you get your desired colour
  • 80 g Sprinkles plus more for topping the cupcakes, Halloween confetti

Frosting:

  • 120 g butter softened
  • 500 g icing sugar
  • 3 Tablespoons milk
  • 1 Teaspoon vanilla extract
  • Purple food colouring

Instructions

Cupcakes:

  1. Preheat your oven to 180℃ (160℃ for fan ovens) and line a cupcake tin with 12 cases.
  2. In a large bowl, cream together the butter and sugar until soft and fluffy then stir in the vanilla extract.
  3. Mix in the flour and the eggs, a little bit at a time, until you have a smooth, thick cake batter.
  4. Stir in the green food colouring then add the sprinkles.
  5. Divide the batter between your 12 cases and bake for 20-25 minutes until a toothpick through the middle comes out clean. Transfer to a wire rack to cool.

Frosting:

  1. Add the butter to a bowl and mix in half of the icing sugar and 2 tablespoons of milk. Once that's smooth, add the rest of the icing sugar and the other tablespoon of milk.
  2. Stir the vanilla extract and purple food colouring into the frosting then transfer it to a piping bag fitted with a large star nozzle.
  3. Pipe some frosting onto each cupcake then top with remaining confetti sprinkles.

Notes

  • Store in an airtight container in the fridge for up to 5 days.
