Ingredients

  • 12 ounces ham diced
  • 1 cup bell pepper any color, chopped
  • 1 bunch scallions green and white diced and separated
  • 2 cups pineapple tidbits drained
  • 3 egg
  • 4 tablespoons butter
  • 2 teaspoons sesame oil
  • 2 tablespoons soy sauce lite
  • 3 cups rice cooked

Instructions

  1. In a large skillet over medium high heat add your ham, chopped bell pepper and white parts of the scallions.
  2. Saute for about 5-8 minutes until the pepper soften a bit and the ham browns.
  3. Next add your pineapple and let it cook with the ham and veggies for about 2 minutes.
  4. Reduce heat to medium low and push everything to one side of the pan.
  5. Scramble your 3 eggs and add them to the cleared spot of the pan.
  6. Scramble the eggs until cooked through.
  7. Remove everything from the pan and set aside.
  8. Return the pan to medium high heat and add the butter and sesame oil.
  9. Add the cooked rice to the pan and pour over the soy sauce.
