Hawaiian Fried Rice
Description
Hawaiian Fried Rice uses diced ham, bell pepper, scallions, pineapple, eggs, and rice, all cooked with butter, soy sauce, and sesame oil. The ham, peppers, and white scallion parts are sautéed until tender and browned, then pineapple tidbits are cooked with them to add a touch of sweetness. Eggs are scrambled in the pan separately and combined with the other ingredients. The rice is fried last with butter, sesame oil, and soy sauce, creating a flavorful coating. This layering of ingredients provides lightly crisped rice combined with tender, juicy bits of meat, vegetables, and fruit.
The method maximizes texture by cooking the eggs apart before folding them into the mixture and frying the rice with flavorful fats and soy sauce. The dish can be served on its own as a filling entree that delivers a blend of savory, sweet, and umami notes with a variety of textures from soft pineapple to tender meat and crisp vegetables.
