Haydari Meze

Haydari Meze is a creamy, herby yogurt and feta dip seasoned with garlic, mint, dill, and olive oil. This spread features a blend of thick yogurt and crumbled feta for tang and richness, enhanced by sautéed garlic and mint infused in oil and finished with fresh dill, served cool as a flavorful appetizer or accompaniment.

Description

This recipe uses thick yogurt combined with crumbled feta cheese to form a dense, creamy base. Garlic and dried mint are quickly fried in olive oil and optional butter to soften and release their aromas before being mixed into the yogurt mixture along with fresh dill and salt. A portion of the infused oil is reserved to drizzle on top when serving.

The preparation results in a herbaceous and savory dip with a balance of creamy texture from the yogurt and tangy saltiness from the feta. The garlic and mint provide an aromatic quality, while the fresh dill adds a bright green note. This meze is typically served chilled as a spread or dip alongside bread, vegetables, or grilled meats.

Letting the mixture rest in the refrigerator for 30 to 60 minutes before serving allows the flavors to meld and intensify. The recipe's simplicity allows for personal adjustments in herb amounts and salt to taste.

The steps use a short warm oil infusion to soften the herbs and garlic, enhancing the final flavor without overpowering the creamy base.
