  • 3 banana mashed, ripe
  • cup coconut oil 70 grams, melted
  • cup coconut sugar
  • 3 egg beaten, or flax eggs
  • cup almond milk or applesauce
  • 1 teaspoon vanilla
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • Pinch cloves ground
  • 1 teaspoon baking soda
  • Pinch salt sea salt
  • 1 cup coconut flour 95 grams
  • 1 cup almond flour 95 grams, or hazelnut flour
  • 2 oz unsweetened baking chocolate diced, or chocolate chips

For topping (OPTIONAL):

  • ¼ cup unsweetened baking chocolate or chocolate chips (OPTIONAL)
  • 10 dried banana chips (OPTIONAL)
  • 4 tablespoon walnut OPTIONAL, pieces

Instructions

  1. Preheat oven to 350F. Line a loaf pan with parchment paper.
  2. In a large mixing bowl and using a wooden spoon, mix coconut oil into the mashed bananas.
  3. Add in the coconut sugar, eggs or flax eggs, almond milk/ applesauce, vanilla and spices. Sprinkle the baking soda and salt over the mixture and mix in.
  4. Add the flours last, mixing just enough to incorporate - take care not to overmix! Stir in the chopped baking chocolate or chocolate chips, and fold to combine.
  5. Transfer mixture into a buttered 4×8 inch loaf pan. Bake for 50 minutes to one hour, or until a tester comes out clean. Cool on a rack.
  6. For a special appearance, OPTIONAL: Melt remaining ¼ cup chocolate chips in the microwave. Pour it on the bread when it's been removed from the pan. Top with banana chips and walnut pieces.

Notes

  • Store the banana bread in the pan if not serving right away to help it hold together.
  • Be very gentle when removing it from the pan to avoid breakage as the loaf is moist.
  • Fold the chopped chocolate into the batter just enough to combine to prevent overmixing.
