Healthy Chocolate Waffles

Delicious chocolate waffles made with whole wheat flour, cocoa powder, eggs, maple syrup, and yogurt. Fluffy, tasty, easy to make, and ready in just 30 minutes.

Ingredients

  • 2 cups whole wheat flour or gluten-free flour
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon fine kosher salt
  • 3 large eggs
  • 2 1/2 cup PLAIN yogurt
  • 2 tablespoons maple syrup or honey
  • 2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips

TOPPINGS:

  • Fresh raspberries or strawberries
  • maple syrup or honey
  • shaved chocolate optional

Instructions

  1. In a medium bowl stir the dry ingredients: the flour, cocoa powder, baking powder, baking soda, and salt.
  2. In a second large bowl whisk the eggs, yogurt, and vanilla. Add in the dry ingredients and stir well to combine, then fold in the chocolate chips.
  3. Preheat a waffle maker until a green light appears. Cook the waffles for 3-5 minutes, or until slightly crisp
  4. Serve with fresh fruits, and maple syrup and top with shaved chocolate, if desired.

Notes

  • use any flour of your choice.
  • instead of maple syrup, you may use agave or honey.
  • Top with your favorite fruits and spread.
  • Double the batter and store to make more the next day.
