Ingredients

  • 6 large eggs
  • 6 large egg whites
  • 1 cup baby spinach Chopped
  • 1/2 red bell pepper Diced
  • 1/2 green bell pepper Diced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup shredded Mozzarella cheese

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Spray a muffin pan with non-stick cooking spray.
  3. Divide the bell peppers and spinach evenly among the muffin tins.
  4. Then top with the shredded mozzarella cheese (divided evenly among the muffin tins as well).
  5. In a large mixing bowl, whisk together the eggs, egg whites, salt and pepper until well combined.
  6. Top each muffin tin with the eggs mixture and fill just below the top of each one.
  7. Bake for 24-26 minutes until the eggs are set.
  8. Let cool for a few minutes and then carefully remove the egg muffins from the tin.
  9. Serve warm immediately or cool completely to store in the refrigerator or freezer for later!
