Healthy Olive Oil Cake

This Healthy Olive Oil Cake balances the moisture of Greek yoghurt with the bright citrus notes from lime juice and zest. The olive oil adds a subtle richness, creating a tender crumb without butter. The cake’s moderate sweetness and gentle tang make it versatile for casual teatime or dessert. A light sprinkle of lime zest and sugar on top adds texture and a fresh finish, and serving it with extra Greek yoghurt complements its creamy texture while softening the citrus edge.

Description

The Healthy Olive Oil Cake blends Greek yoghurt, olive oil, and lime to create a moist and tender cake with a soft crumb. The zest and lime juice impart a refreshing citrus flavor that balances the richness from the oil and yogurt. The batter is handled minimally to keep the texture light and tender. Baking until the top is golden and a skewer comes out clean ensures the cake is cooked through without dryness.

This cake serves well alongside plain Greek yoghurt for a creamy contrast and extra moisture. The lime sugar topping adds a subtle crunch and enhances the cake's citrus notes. It makes a suitable accompaniment for tea or a light dessert option where you want a moist but not overly sweet cake.

Instructions

  1. Preheat your oven to 180 deg C and grease a 22cm baking tin - I used olive oil spray
  2. In a large bowl mix the yoghurt, olive oil, juice and eggs until well combined.
  3. In another bowl combine the flour, suagr, baking powder, salt and lime zest.
  4. Pour the lime mixture into the flour mixture. Using a wooden spoon mix until well combined. Do not overwork the batter.
