This Healthy Spinach Artichoke Dip is a lightened up version of a classic dip and can be made in just 30 minutes. This tasty low carb and keto dip is the perfect dish for football season or anytime you're entertaining. Plus, it's gluten free!

Ingredients
- 1 package (8 ounces) Neufchatel cheese, softened
- 1 cup nonfat Greek yogurt
- 1 teaspoon onion powder
- ¾ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
- salt and pepper
- 10 ounces frozen spinach, drained and squeezed dry
- 1 can (14 ounces) artichoke hearts, drained and chopped
- 4 ounces (about 1 cup) shredded mozzarella cheese
- 2 tablespoons Parmesan Cheese
Instructions
- Preheat the oven to 400°F.
- Mix the softened cheese, yogurt, onion powder, garlic powder, cayenne pepper, ¼ teaspoon salt and ¼ teaspoon pepper together in a large bowl until smooth.
- Stir in the spinach, artichokes, mozzarella, and parmesan until well distributed throughout the mixture.
- Transfer the dip to a Transfer the dip to an 8x8-inch square baking dish, oval baking dish or round pie pan. If desired, sprinkle a little more mozzarella and/or parmesan on top.
- Bake for 15-20 minutes until bubbly and golden on top.
- Serve dip with crackers, tortilla chips, pita chips or vegetables like carrot sticks or celery sticks.
Notes
- Leftover spinach artichoke dip is delicious spread on toast, tossed with pasta or stirred into scrambled eggs.
- Leftover dip can be stored in an airtight container in the fridge for 3-4 days. You can reheat it in the microwave or oven until hot.
- I recommend frozen spinach in this dish rather than fresh- it's inexpensive and convenient to use. Be sure to squeeze out the water after defrosting it so that the dip doesn't get too watery.
- Canned or frozen artichokes are available all year round in the grocery store.
