Herb Chicken with Broccolini Meal Prep

This easy Herb Chicken with Broccolini Meal Prep is an easy dish to throw together quickly on a busy weekend so you don’t spend all day meal prepping for the week!

Ingredients
- 2-3 Russet potatoes diced
- 5 cloves garlic
- 8 chicken thighs
- 1/4 cup unsalted butter melted
- 2 tbsp herbs basil, thyme, oregano
- 340 grams Mann's Broccolini®
- 1 tbsp oil
- 1 tsp red pepper flakes
- 1 tsp garlic powder
- parmesan to taste
- 1 tbsp lemon juice

Instructions
- Heat your oven to 425F.
- Place your potatoes, garlic, and chicken thighs in a pan and then pour in melted butter that’s been mixed with herbs. Make sure everything is coated before placing it in the oven for 45 minutes.
- While the chicken is cooking, put your Mann's Broccolini® on a sheet pan before drizzling on olive oil, garlic powder, and pepper flakes. Give them a mix to make sure everything is coated evenly and at the 20 minute mark, place them in the oven with your chicken, letting them roast for 25 minutes.
- Once done, pull everything out of the oven. While the chicken is resting, grate some parmesan on top of the broccolini and give it a touch of lemon juice on top. Give it a toss and serve with your chicken and potato once ready.
