Description
This recipe combines all-purpose flour with a mix of ground cinnamon, nutmeg, ginger, allspice, and cloves, balanced with baking powder, baking soda, and salt. Creaming softened butter with granulated and dark brown sugars creates a fluffy base, enhanced with vanilla extract. The flour-spice mixture is folded in slowly, resulting in a dough that may feel dry but becomes manageable after chilling for at least one hour.
Rolling the dough to about 1/4 inch thickness and cutting with a fluted rectangular cookie cutter yields uniform cookies that bake at 325°F (165°C) for 16 to 18 minutes until golden brown and crisp. The spice blend creates a warm fragrant flavor reminiscent of classic Biscoff cookies. Cooling on the baking sheet allows the cookies to firm up while retaining a pleasing snap.
These cookies can be shaped with any cutter; for ice cream sandwiches, rolling thicker and cutting rounds works well. If a fan-assisted oven is not available, baking at 350°F (180°C) with adjustments in time and pan rotation works too.
