Description

Once the pudding is thick and creamy, butter and vanilla extract are stirred in to enrich the texture and deepen flavor. Cooling it to remove steam prevents skin formation, and covering the surface with plastic wrap helps maintain smoothness during chilling. The pudding sets in the fridge for at least two hours, developing a firm but soft consistency.

Ingredients
- 1 cup sugar
- ½ cup cocoa powder , can be natural or Dutch processed
- ¼ cup cornstarch
- ¼ teaspoon salt fine sea salt
- 5 cups milk whole
- 1 tablespoon vanilla extract
- 3 tablespoons butter unsalted
Instructions
- In a medium saucepan, whisk together sugar, cocoa powder, cornstarch and salt.
- Add two cups of milk, and whisk until combined.
- Turn the heat to medium-low and whisk until the mixture begins to thicken and steam.
- Slowly add the remaining milk, stirring constantly until the mixture reaches a boil.
- Allow the mixture to boil for one minute or until it is very thick. Then remove from heat and stir in butter and vanilla extract until fully combined.
- Pour into desired bowls or serving dishes. Allow to cool until no longer steaming.
- Cover with plastic wrap, pressing it down to the top to avoid a skin from forming. Chill for a minimum of 2 hours, but up to 2 days.
- Garnish and serve.
