Description
The Homemade Galette des Rois consists of two rounds of puff pastry enclosing apricot jam and frangipane, which is an almond-flavored creamy filling. A whole almond, dried bean, or feve is optionally hidden inside as part of a traditional game where the person who finds it gains a symbolic title.
The top puff pastry disc is sealed firmly to the bottom one by moistening the edges with egg wash and crimping. After chilling in the refrigerator, the assembled galette is brushed with more egg wash and slits are cut for steam to vent.
