Homemade Honey Matcha Ice Cream

Homemade Honey Matcha Ice Cream blends matcha powder with condensed milk, honey, vanilla extract, and whipped heavy cream for a smooth, creamy frozen dessert. The matcha offers subtle bitter-green notes balanced by the sweetened condensed milk and honey, while the whipped cream adds lightness. This ice cream requires no ice cream maker and freezes overnight to develop a firm texture.

Description

This no-churn Honey Matcha Ice Cream recipe starts by whisking together sweetened condensed milk, matcha powder, honey, and vanilla extract to create a base with sweet and earthy matcha flavor. Separately, heavy cream is whipped to firm peaks, then gently folded into the matcha mixture to maintain a light texture. The mixture is poured into a chilled container and frozen overnight until solid.

The resulting ice cream has a creamy, smooth mouthfeel with the distinct vegetal bitterness of matcha softened by the honey's natural sweetness and complemented by vanilla. Since the ice cream does not require churning, it offers a straightforward way to enjoy homemade matcha ice cream with minimal equipment.

Ingredients

Servings
  • 2 cans condensed milk 400 ml each
  • 6 tbsp matcha powder
  • 2 tbsp honey
  • 2 tsp vanilla extract
  • 2 cups heavy cream

Instructions

  1. Whisk together your condensed milk, matcha powder, honey, and vanilla extract and set aside.
  2. With your electric mixer on medium-high speed, mix until your heavy cream has firm peaks.
  3. Bit by bit, fold your whipped cream into your condensed milk mix (as you always want to heavier ingredient on the bottom) until they’re blended together.
  4. Once everything has been blended together, pour into a chilled container and freeze until solid. I froze my ice cream overnight.
