Homemade “Mounds" or “Bounty" Chocolates
Description
This recipe creates a coconut candy resembling commercial Mounds or Bounty chocolates. Salted butter is creamed with confectioners' sugar, then shredded coconut and vanilla are incorporated to form a thick filling. The mixture is shaped into logs or balls and chilled to firm up before coating.
The coating is made from melted good-quality dark chocolate, into which each shaped piece is dipped to cover it entirely. The contrast between the smooth, bittersweet chocolate and the sweet, slightly chewy coconut center defines the confection’s character.
The candies can be served chilled or at room temperature, making them suitable as homemade sweets or gifts. Their texture is soft inside with a smooth, set chocolate exterior.
Milk or dark chocolate may be used depending on preference, but quality ingredients improve the final taste and texture. Careful melting and dipping ensure an even chocolate coating without melting the coconut center.
Ingredients
- 1 tick butter salted, softened
- 2 ¼ cups confectioners' sugar
- 2 ¾ cups coconut shredded coconut, (try to get a propylene glycol free brand)
- ½ tsp vanilla
- 227 g dark chocolate good quality
Instructions
- Cream the butter and sugar, then add the coconut and vanilla, and mix until well incorporated.
- Form into small logs or balls, and place on a wax paper lined tray. Refrigerate for 20 minutes.
- Meanwhile, melt chocolate in the microwave at the defrost setting, or over double boiler. When melted, using a fork or dipping tool, begin to dip each coconut shape into the chocolate.
- Once completely coated, place back onto the wax paper lined tray, and if desired, sprinkle the top with a little coconut. Repeat with the rest of the candies.

- Use high-quality, propylene glycol-free shredded coconut for the best texture.
- Ensure the coconut mixture is well chilled before dipping to prevent melting.
