Homemade Teriyaki Sauce

A recipe for Homemade Teriyaki Sauce! Soy sauce, mirin, sake, and sugar are simmered together to create an easy and flavorful sauce.

Ingredients

  • 1/2 cup soy sauce 120 milliliters
  • 1/2 cup mirin 120 milliliters
  • 1/2 cup sake 120 milliliters
  • 1/4 cup granulated sugar 50 grams

Optional:

  • 1/2 onion peeled and roughly chopped, small
  • 2 inches ginger peeled, thinly sliced, fresh, 5 centimeters
  • 2 garlic peeled and crushed, cloves

Instructions

  1. In a small saucepan, whisk together the soy sauce, mirin, sake, and granulated sugar.
  2. Add the onion, ginger, and garlic if using.
  3. Place the saucepan over medium high heat to bring to a boil.
  4. Once boiling, reduce the heat to a simmer and cook, whisking occasionally, for 8 minutes. The sugar should be completely dissolved.
  5. If desired, continue to cook for a few more minutes to reduce the sauce and thicken slightly.
  6. If you added the onion, ginger, and garlic, strain the mixture and discard the solids.
  7. If not using right away, allow the teriyaki sauce to cool to room temperature, then store in an airtight container and refrigerate for up to 2 weeks.
