Homemade Vanilla Extract

This Homemade Vanilla Extract is crafted by steeping split vanilla pods in vodka for several months to extract the vanilla flavor. The pods are prepared to fit inside bottles and covered completely with vodka to allow full infusion. The mixture is stored in a cool, dark place and shaken regularly during maturing to enhance extraction. Over time, the vodka absorbs the characteristic aroma and taste of vanilla pods, creating a natural vanilla extract suitable for baking and cooking.

Description

Homemade Vanilla Extract is produced by placing split whole vanilla pods into clean, dry bottles and covering them with vodka, ensuring the pods remain submerged to fully infuse their flavor. The pods are expertly prepared by splitting lengthwise, and if necessary, trimmed or folded to fit inside the bottles. The sealed bottles are stored in a dark, cool environment like a cupboard. Shaking the bottles weekly encourages extraction of the vanilla compounds into the alcohol. This process requires patience, as the extract should mature for a minimum of four months and ideally up to one year before use, resulting in a deep, aromatic vanilla essence suitable for enhancing sweetness in a variety of recipes.

Ingredients

Servings
  • 15g vanilla pods Or approximately 5x plump vanilla pods (½ ounce, whole
  • 200 millilitre vodka

Instructions

  1. First, ensure your bottles are clean and dry.
  2. Weigh out the required amount of vanilla pods you will need.
  3. Split each vanilla pod in half lengthwise with a pair of kitchen scissors or a sharp-tipped knife. If they're too long for the bottle, you can cut them in half crosswise too.You don't have to slice the pods all the way through, it's fine to leave one end intact for easier handling.
  4. Push the pods into the bottle.Ensure the pods are deep enough inside the bottle to be fully covered with the vodka once you add it. If they look too long, remove them and cut them shorter or fold them in half.
  5. Use a funnel or a jug to fill the bottle with vodka until the pods are completely covered. It's a good idea to leave some space at the top of the bottle to allow for shaking.
  6. Seal the bottle tightly and shake it well.
  7. Store the extract in a cool, dark place like a kitchen cupboard. Give it a good shake once a week and let it mature for at least 4 months, ideally a year.
  8. When making multiple bottles or starting a rotation, it's a smart move to label each bottle with the date.
