  • 2 tablespoons granulated sugar
  • 1 teaspoon active yeast
  • 2 ¼ cups 00 flour
  • ½ teaspoon sea salt coarse
  • lemon optional, zest of ½
  • 2 egg large, whisked
  • neutral cooking oil for frying
  • powdered sugar for garnish

Instructions

  1. In a medium-sized bowl, whisk together the warm milk, 1 tablespoon of sugar, and yeast until combined. Set it aside for 5 to 7 minutes or until a raft has formed.
  2. In a separate large bowl, mix together the flour, salt, remaining 1 tablespoon of sugar, and lemon zest.
  3. Form a well in the dry ingredients and add in the 2 whisked eggs.
  4. Mix in the eggs as much as possible.
  5. Add the milk and yeast mixture and combine until the ingredients are mixed.
  6. Cover with plastic and keep in a warm dark place to proof for about 2 hours or until doubled in size.
  7. Add the oil to a pot and heat until it reaches 350°.
