Ingredients
- 1 pound baby carrots
- 3 tablespoons unsalted butter
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 2 teaspoons garlic salt (with parsley flakes)
- fresh ground black pepper
- Parsley, dried

Instructions
- Add several cups of water to a pot (enough water to cover the carrots by 1-2 inches). Sprinkle with garlic salt and bring to a boil on MEDIUM-HIGH heat. Add carrots and cook for 5 to 8 minutes or until fork tender.
- Drain the water from the pot. Add butter, honey, lemon juice, pepper, and garlic salt. Cook on LOW for 5-7 minutes or until carrots are coated with glaze.
- Add more salt and pepper to taste and garnish with dried parsley.
Notes
- Make ahead of time. These are best when freshly cooked but can be prepped the day before. Wash and boil the carrots according to the recipe. Drain and allow them to cool before placing them in an airtight storage container and in the refrigerator. Let them sit at room temperature for about 30 minutes before heating them up with the butter, honey, lemon juice, and other seasonings.
- Store in an airtight container in the fridge for 3-4 days. Freeze for up to 2 months. They will be much softer after being frozen, but still delicious.
