Ingredients
- 5-6 large carrots
- 2 Tablespoon honey
- 1 Tablespoon extra virgin olive oil
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- Parsley for Garnish
Instructions
- Prepare the carrots. Wash and peel the carrots. Cut them into approximately 3-inch-long pieces. Slice each piece in half lengthwise, and if the halves are still too thick, slice them in half again to ensure even cooking.
- Make the glaze. In a mixing bowl, whisk together the olive oil, honey, sea salt, and pepper until well combined.
- Coat the carrots. Add the prepared carrots to the bowl and toss them in the honey-olive oil mixture, ensuring all pieces are evenly coated.
- Bake the carrots. Line a baking sheet with parchment paper for easy cleanup. Spread the honey glazed carrots in a single layer on the baking sheet. Bake in a preheated oven at 400 F for about 30 minutes or until the carrots are tender and slightly caramelized.
- Garnish and serve. Sprinkle the honey roasted carrots with freshly chopped parsley and serve warm.

- Cut for even cooking: Slice carrots into uniform pieces, about 3 inches long and halved (or quartered if thick), so they roast evenly and caramelize properly.
- Space them out: Arrange the carrots in a single layer without overcrowding the pan. Overlapping pieces can steam rather than roast, preventing caramelization.
- Roast at high heat: Roast at 400 degrees F to achieve a tender texture with golden, slightly caramelized edges.
