Honey Roasted Beets are not only delicious, they are an easy tasty side dish for the holidays or for any day. With just four ingredients, these beets only take about 30 minutes to roast to delicious, tender perfection.

Ingredients
- 2 medium beets
- 1 tablespoon olive oil
- 2 tablespoons honey
- 1 teaspoon salt
- ½ teaspoon fresh ground black pepper to taste
Instructions
- Cut both ends off of the beets.
- Cut the beets into similar sized chunks.
- Place the beets in a medium bowl. Season with salt and pepper. Drizzle the oil and honey into the bowl.
- Mix the beets well so that all of the pieces are basted with the oil and honey.
- Spread the beet pieces out on a parchment-lined baking sheet. This will save on clean up. Roast them in a preheated 400°F oven for about 30 minutes until they are tender and caramelized.
To Air Fry Roasted Beets
- Do steps 1-4 above.
- To air-fry the beets, spread out the pieces on the air fryer basket. Air fry for 6-8 minutes at 350°F. Shake the basket or flip the pieces. Air fry for another 4 minutes. Test the beets. If they are starting to soften, increase the temperature to 400°F, flip them and air fry for another 4 minutes. Test for doneness. If they aren’t quite done, air fry at 4 minute intervals until the beets are tender and the edges are caramelized.

- What to do with Leftovers
- Leftovers can be eaten cold or warm. Storage: Store leftovers in an airtight container for 3-4 days in the refrigerator.
- Reheating: Leftovers can be reheated in the air fryer at 350°F for about 5 minutes. They can also be reheated in the oven, preheated to 350°F or in the microwave for 1-2 minutes until hot.
- : Leftovers can be frozen for a couple of months to add to soups, stews or salads.
