Instructions

  1. Cut both ends off of the beets.
  2. Cut the beets into similar sized chunks.
  3. Place the beets in a medium bowl. Season with salt and pepper. Drizzle the oil and honey into the bowl.
  4. Mix the beets well so that all of the pieces are basted with the oil and honey.
  5. Spread the beet pieces out on a parchment-lined baking sheet. This will save on clean up. Roast them in a preheated 400°F oven for about 30 minutes until they are tender and caramelized.

To Air Fry Roasted Beets

  1. Do steps 1-4 above.
  2. To air-fry the beets, spread out the pieces on the air fryer basket. Air fry for 6-8 minutes at 350°F. Shake the basket or flip the pieces. Air fry for another 4 minutes. Test the beets. If they are starting to soften, increase the temperature to 400°F, flip them and air fry for another 4 minutes. Test for doneness. If they aren’t quite done, air fry at 4 minute intervals until the beets are tender and the edges are caramelized.

Notes

  • : Leftovers can be frozen for a couple of months to add to soups, stews or salads.
