Honey Sriracha Chicken and Broccoli Meal Prep Bowls
Description
The recipe starts by coating diced chicken breasts in egg whites and cornstarch with salt to create a crispy exterior when baked. The chicken is baked at 425°F, flipped, and then fresh broccoli florets are added to the pan to roast with sesame oil and seasoning. Both components cook together until the chicken is fully cooked and broccoli is tender yet crisp. Meanwhile, a sauce made from honey, Sriracha, rice vinegar, and sesame oil is whisked until smooth. Once the chicken is baked, it is tossed in the sauce for a balance of sweetness and heat. The meal prep bowls are portioned with cooked brown rice and topped with sliced scallions and sesame seeds for added flavor and texture.
This dish suits meal prepping, offering a satisfying combination of protein, vegetables, and grains. It reheats well and provides a balanced lunch or dinner option with sweet-spicy notes from the sauce and nutty sesame accents. The crisp roasted broccoli complements the tender chicken for a well-rounded texture.
