Honey Teriyaki Shrimp Lettuce Wraps

Report
Honey Teriyaki Shrimp Lettuce Wraps combine lemon pepper flavored rice with shrimp coated in a sweet, tangy honey teriyaki sauce. Served in romaine lettuce boats with edamame, red onion, cucumber, and cheese, these wraps balance savory shrimp with fresh crisp vegetables. The versatile dish can be assembled just before eating to maintain lettuce crunch.

Description

This recipe prepares cooked shrimp sautéed briefly in a sauce made from soy sauce, hot honey, lime juice, sriracha, and seasonings until the shrimp absorb the flavorful glaze. The base is Right Rice flavored with lemon pepper, prepared according to package directions. Edamame is cooked and shelled, cucumber diced, and red onion prepared as fresh accompaniments.

The components are assembled into romaine lettuce leaves folded into boats, layered with rice, shrimp, red onion, cheese, and edamame. Additional honey teriyaki sauce and spicy mayo can be drizzled on top, and garnishes like green onions or sesame seeds complete the dish. The lettuce provides a crisp vessel contrasting with the tender shrimp and rice.

For meal prep, store fillings separately from the lettuce to prevent sogginess. Alternatives like diced chicken or tofu can replace shrimp for different dietary preferences. These wraps serve well as light meals or appetizers with a combination of sweet, savory, and spicy notes.

Ingredients

Servings
  • 1 package Right Rice Lemon Pepper flavored
  • 1 lbs Shrimp cooked, peeled + deveined, frozen
  • 1 package romaine lettuce used as boats
  • ½ English cucumber large
  • 1 bag edamame frozen
  • ¼ cup red onion
  • ½ cup cheese of choice

For the honey teriyaki sauce:

  • 3 tbsp soy sauce
  • 3 tbsp hot honey Mike's brand
  • 1 lime juiced
  • 1 tsp sriracha
  • salt to taste
  • black pepper to taste

Instructions

  1. Start by preparing the rice according to the bag’s instructions.
  2. Then, in a small skillet, add soy sauce, hot honey, lime juice, sriracha, and salt and pepper over medium heat. Whisk the sauce together until it thickens a bit and is well mixed.
  3. Add the shrimp in (even if it’s precooked, let it saute for 1-2 minutes on each side). Turn off the heat and allow the shrimp to soak up the flavor.
  4. Prepare the vegetables. Cook frozen edamame and remove from it’s shell if not already shelled. Dice red onion, and wash lettuce.
  5. Then, to assemble the lettuce wraps, take two pieces of lettuce stacked on each other, add rice, then the cooked shrimp, red onion, cheese, edamame, and drizzle with desired amount of spicy mayo and any remaining honey teriyaki sauce from the skillet.
  6. Garnish with green onions or sesame seeds if desired and enjoy!
