Ingredients
- 8 ounces thin sliced chicken cutlets
- 1/8 teaspoon kosher salt
- Black pepper to taste
- cooking spray
- 1 cup diced onion
- 1 cup diced green pepper
- 1/4 cup light mayonnaise
- 1/2 cup light sour cream
- 4 oz light cream cheese (softened)
- 4 oz shredded mild provolone cheese

Instructions
- Preheat oven to 350°F. Season chicken with salt and pepper on both sides.
- Spray a grill pan or large skillet with cooking spray and cook chicken on high heat about 1 minute on each side, until cooked through.
- Slice thin, set aside.
- Spray with more oil and saute onions and peppers over medium-low heat for 5 to 6 minutes, until soft.
- Combine all the ingredients in a medium bowl.
- Place in an oven-proof dish and bake 20-25 minutes, until hot and cheese is melted.
