Hot Honey Chicken Thighs Recipe (Spicy Honey Chicken)

Hot Honey Chicken Thighs are boneless, skinless thighs soaked in buttermilk then coated in a seasoned panko and flour mix, baked until crisp and golden. A warm honey infusion with chili flakes and hot sauce is poured over to add a balance of sweet heat. The texture contrasts between the crunchy crust and tender chicken, suitable as a bold main dish.

Description

This recipe involves marinating chicken thighs in a buttermilk and salt mixture, which tenderizes and flavors the meat. The thighs are then coated with a seasoned combination of panko breadcrumbs, whole wheat flour, paprika, Italian seasoning, and salt, achieving a crispy crust when baked at 425°F.

While the chicken cooks, a honey sauce infused with chili flakes and hot sauce is gently warmed, allowing the spicy flavor to develop before straining. The hot honey drizzle adds sweetness with a spicy kick, complementing the savory crust and juicy interior of the chicken.

The result is a dish with crisp exterior texture and moist, flavorful meat, served best fresh out of the oven. This combination works well for a satisfying dinner with balanced sweetness and heat.

Ingredients

Servings
  • 8 chicken thighs boneless, skinless
  • 1 cup buttermilk can be light
  • 2 teaspoons salt divided, sea salt
  • Cooking spray oil
  • 3 cup panko gluten-free if needed
  • ½ cup whole wheat flour gluten-free if needed
  • 1 tablespoon paprika
  • 1 tablespoon Italian seasoning
  • ½ cup honey
  • 1 tablespoon chili flakes
  • 1 teaspoon hot sauce

Instructions

  1. Put the chicken thighs into a large bowl. Add the buttermilk and 1 teaspoon of sea salt and mix well. Put the bowl into your fridge for at least 20 minutes (or up to 8 hours.)
  2. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper and spray it generously with spray oil.
  3. In a shallow bowl, mix the panko, flour, paprika, Italian seasoning, and the remaining teaspoon of salt.
  4. Working with one piece of chicken at a time, dip it into the panko mixture and make sure that it is well-coated. Put the chicken on the baking sheet then continue to coat the rest.
  5. Spray the tops of the chicken with oil then put them into your oven and bake for 30 minutes, or until they are crispy and golden.
  6. While the chicken bakes, make the honey. In a small pan, warm the honey, chili flakes, and hot sauce over medium heat. Once the honey starts to bubble a little, remove the pan from the heat. Let it infuse for 5 minutes then strain the honey through a fine-mesh sieve.
  7. When the chicken has finished cooking, drizzle it with the hot honey and serve immediately.
