How to Cook Thin Pork Chops Recipe

This recipe details seasoning and pan-frying thin pork chops to achieve a juicy and flavorful result. The pork chops receive a spice rub blending paprika, garlic, onion powders, salt, pepper, and sugar, then are coated with oil before cooking. The method uses a hot pan and brief cooking times to gently sear the chops, preserving moisture while developing a slight crust. A honey garlic butter mix is prepared to complement the pork with a subtle sweetness and herbaceous note after cooking.

Description

How to Cook Thin Pork Chops offers a straightforward process to prepare thin cuts of pork, typically 3 ounces each, seasoned evenly with a mix of paprika, garlic powder, onion powder, salt, pepper, and sugar. After drying the chops, oil is applied to aid in searing and prevent sticking. The pork is placed in a cold pan which is then heated to medium-high; this technique encourages an even sear. The pork is cooked without disturbance for several minutes to form a crust while remaining tender inside, then flipped for a short finishing cook.

The recipe includes a honey garlic butter made from softened butter mixed with finely minced garlic, honey, and parsley, enhancing the pork with a gentle sweetness and aromatic lift. Thin pork chops like rib chops with some marbling retain juiciness throughout the cooking process. The balanced spices and finishing butter make this a straightforward dish suitable for quick meals.

Choosing pork chops with some fat marbling helps avoid dryness. If thin chops are unavailable, thicker chops can be halved after partial freezing for ease of cutting. The cooking timing and temperature instructions ensure the thin chops sear properly without overcooking.

Ingredients

Servings
  • 4 thin pork chop see notes, 3 ounces each
  • ½ teaspoon sweet paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon sugar
  • 1 tablespoon neutral cooking oil generic cooking oil

Honey Garlic Butter

  • 1 tablespoon butter softened
  • 1 teaspoon parsley finely minced
  • 1 teaspoon honey
  • 1 small garlic very finely minced, clove

Instructions

  1. Turn your cooking element to medium-high and let it heat up while you get your pork chops ready. (If you have a gas or induction cooktop, wait until you're ready to put the pan on the element before turning it on.) In a small bowl, mix the honey garlic butter ingredients until they are well combined.
  2. Mix the spices together in a small bowl.
  3. Dry the thin pork chops with paper towels and then sprinkle the spices evenly over both sides.
  4. Drizzle the oil over the top of the pork chops and use your fingers to spread it around. Place the pork chops, oiled side down, into a cold frying pan - cast iron works great.
  5. Place the frying pan onto the hot element and wait until you hear them start to sizzle. Once they do, press them gently into the pan. Cook the pork chops without moving them for 4-5 minutes, until they look nearly cooked. They will be opaque all the way up the sides and just a bit red on top.
  6. Flip the nearly cooked pork chops over and finish cooking for 1 minute on the other side. They are done when they reach an internal temperature of 145 degrees Fahrenheit.
  7. Let the pork chops rest for 5 minutes and then serve them with a dab of the honey garlic butter on top.

Notes

  • Thin pork chops typically measure between ½ and 1 inch thick; thicker chops can be halved after partial freezing for easier slicing.
  • Rib chops retain more juiciness than leaner cuts due to marbling.
  • Select chops with some fat marbling to prevent dryness during cooking.
